Giovanni Agostino Curreli's Erkìles artisanal dairy is the first company in Sardinia to receive the "Vegetarian Quality" certification, as labeled on the label.
The "Bisine" line is devoted entirely to the production of Pecorino Cheese with the use of only vegetable rennet (see "Cynara cardunculus") and therefore suitable for Vegetarian food and in line with the culture of the Hebrew and Muslim world.
In order to obtain the "Vegetarian Quality" certification, vegetable beetles are used to coagulate the sheep's milk produced on the farm and are followed, with diligence and precision, the production details provided by the "Vegetarian Quality Discipline".
In particular, this discipline provides careful attention not only to the process of transforming milk into cheeses and ricotta, but above all to a particular care of animal welfare, requiring - where possible - rough pasture in order to avoid stress and disease to animals and to ensure To the best of their well-being, as in the case of Erkies.
A healthy and happy animal produces the highest quality milk; The power is controlled and no GMO and antibiotic products are used for the treatment.
Therefore, the "Bisine" cheese line, in addition to being a high quality production, is particularly attentive to animal welfare and the preservation of the land.
A production suitable for all "demanding" consumers and not only to the Vegetarian consumer for its qualities:
- organoleptic (because the cheeses are very good);
- Healthy (because lighter and without the rennet of animal origin) and caring for animals and environmental protection.
