It is a pecorino that calls for preparation mode, the old Fiore Sardo of the shepherds. This sheep's cheese of the dairy tradition of Sardinia par excellence.

Here we have a raw cheese, hard, tangy and spicy and with a hint of smoke. This is due essentially to its content of salt, the use of rennet paste of lamb or kid and the practice of soft smoking. These beautiful characteristics become more pronounced with the progress of his aging. The dough, white in color, is hard and may have tiny un'occhiatura that, with the progress of maturation, become brittle and grainy. This feature makes it particularly suitable as a grated cheese.
The crust is very thick, depending on the curing conditions, and dark in color; the form presents the typical form of a mule back, with the convex sides.
The milk from a single herd, turned raw, it comes exclusively from Sardinian sheep to pasture. The rennet used, which is also peculiar because it is rennet paste of lamb or kid, gives the product a markedly spicy flavor.
