Velo De Flor - Murales

The driving force behind the special wine Velo De Flor stems from the deep desire to satisfy the curiosity and spirit of experimentation that define Cantina Murales. This project was born from the ambition to combine a carefully managed late harvest with the biological dynamics of the Olbia area in Gallura. The vineyards are located at an altitude of 150 metres above sea level, cultivated using the traditional bush-trained system and benefiting from perfect southern exposure, which provides ideal sunlight for the ripening process. The partnership with flor yeast proves to be delicately balanced, giving life to an unconventional and exceptionally distinctive wine.

The production process is based on a rigorously natural and selective cycle: the grapes are left to dry naturally on the vine through a late harvest carried out entirely by hand. During this overripening phase, yeasts known as the “velo de flor” naturally develop on the grape skins. The subsequent alcoholic fermentation takes place at a constant controlled temperature of 18°C and leads to the formation of the characteristic flor layer on the surface of the wine. These valuable microorganisms act directly on the wine's structure, producing distinctive aromas and flavours, reducing volatile acidity, consuming part of the glycerol and initiating controlled oxidative processes. The maturation journey begins with an initial blending stage in concrete tanks, followed by slow ageing in wood. From the creation of this highly distinctive wine to its actual release, a minimum of 6 years passes.

Visually, Velo De Flor displays a captivating and intense golden / amber colour. On the nose, it offers exceptionally long, rich and complex sensations with remarkable aromatic persistence. Its aromatic profile unfolds across different layers, revealing notes of flor, fresh yeast, dried fruit, vanilla, quince, spices and goudron, followed by an exceptionally smooth retronasal progression in which spicy and secondary notes emerge strongly. On the palate, it expresses a body of great elegance and concentration, with a harmonious flavour and a long, clean finish. With an alcohol content of 15% Vol. and an extract of 40 g/L, it is an exceptional wine both as an aperitif and when paired with aged, blue and mould-ripened cheeses.
