It gets broke again and placed in steel shapes that give it its characteristic convex and rounded sides.

The rind is hard, smooth or rough and oily, for a natural cappature. The color goes from pale brown to almost black, depending of smoked. The grain is hard, tending to the crumbly, white or straw, depending on age, with regularly distributed and fine holes.

During the processing phases, the cheese is placed into steel molds, which give the characteristic shape of the "mule back."
