Lughente - is a broken grain cheese made from cow's milk, processed raw. Once obtained the cheese, the dough is broken again, and then reassemble it into the molds. The cheese during aging, is constantly sprinkled with water and salt. The shape, thus treated, reaches its optimal characteristics between the five or six months of aging.
This preparation allows the texture of the cheese despite the long aging, to maintain its creamy texture and its characteristic lightness of touch.
