Sardinian blue cheese from sheep's milk made in Thiesi
A blue-veined cheese produced from whole pasteurized sheep’s milk
obtained from flocks grazing freely on the green pastures of Sardinia. The
milk is curdled with white paste lamb rennet and selected milk ferments, and using the best French Penicilliums.
After the ripening period of 60 days, it is marketed in wedges package in a modified atmosphere or it is vacuum packed. This cheese is white in color with green veining, smooth, with a delicate aroma and a specific flavor between mild and tangy.
