Thesis - Pala - Wholesale of Sardinian wine

Features:

Grapes: 80% Syrah 20% Bovale

Vineyards and method of cultivation: Uras, traditional sapling (Bovale) Senorbì Espalier low (Syrah).

Land and arrangement: white sand and flat not far from the sea for Bovale 9 m Clayey shale hill and land for Syrah, 260 m above sea level.

Age of the vines: 70 years Bovale, 30 Syrah.

Yield: 45 q.li/ettaro.

Fermentation, maturation, aging: hand picked in the early hours of the morning. Maceration on the skins at a controlled temperature for ten days. Once it is completed the alcoholic fermentation, the malolactic fermentation is conducted and aging in new oak for 3 months. Then to follow is aging in the bottle for three months.

Thesis - Pala - Sardinian traditional products

Tasting notes: deep ruby red, almost impenetrable, intense vinous red fruit, with plum jam and cherries combined with spicy notes of leather, black pepper and roasted coffee. Soft and elegant tannins, full-bodied, enveloping. Long finish.
