Features:
Extract from the thousand-year tradition of Sardinian cheese, the Fiore Sardo Dop of Argiolas is now produced using the best technology, in full respect of the original recipe. With its rounded side "in the rump of a mule" is a cheese made from raw milk, with an unique flavor and fragrance.
It is a cheese with a hard paste, the law requires that it is produced exclusively in Sardinia, where even today it manufactures according prodcedure who retain traits of old techniques, transmitted from the unbroken chain of generations. Typical cheese of the central regions of our island, its most important production center is Gavoi, in Ollolai Barbagia, where they produce every year more than 4,000 quintals of 6,000 products altogether. Productions less significant, not of less value, have scattered among Ollolai Ovodda, Lodine, Orgosolo and Fonni.
The name of the Fiore Sardo is due to the fact that the Pischeddas, the molds in which they were given form until not long ago, wore engraved on the bottom of the shape of a flower (daffodil, lily), which left its impression on the crust. Accompanied by the initial of the manufacturer.
The basis of this cheese is the fresh whole milk, milked only from Sardinian sheep bred in the wild in the pastures under the care of shepherd.

We recommend for the Fiore Sardo, a red wine, a structured Classic Cannonau, such as Dule. Or at least a fine wine as a label of Dettori. Not mistaken even with a raisin natural as Malvasia of Angelo Angioi
