For decades, Sepi has been synonymous with quality and an inseparable connection to its territory, carefully selecting Italian and Sardinian goat’s milk to create a product distinguished by its freshness and delicacy.
This cheese represents the ultimate expression of goat-milk lightness: its production is based on a very short maturation period, no less than fifteen days, a period carefully calculated by the master cheesemakers to allow the paste to develop its characteristic softness while preserving the notes of freshly milked milk. Production begins with pasteurised goat’s milk, essential for ensuring the highest level of hygienic safety and purity of flavour, processed with the addition of only salt and rennet. The process is meticulous: the curd is handled with extreme care so as not to compromise its delicate structure, resulting in a cylindrical shape weighing approximately 700 grams or 1.2 kg in the whole-wheel version, ideal for sale and safe transport.
The appearance of Fresco Capra is extremely inviting: the rind is thin and smooth, with a colour ranging from white to a pale straw yellow, while the interior reveals a completely white paste, uniform and compact, yet at the same time soft and elastic to the touch and when cut.
