Su Soi Vermentino - Murales

The Sardinian winemaking tradition finds one of its finest expressions of excellence and freshness in the production philosophy of Cantina Murales, a winery rooted in the extraordinary hilly landscape of Olbia, in Gallura. The winery stands out in the Sardinian wine scene for its strong artisanal approach and meticulous care for the land, interpreting the region's emblematic grape varieties through clean and respectful farming techniques. Su Soi is produced from vineyards located in privileged hillside positions, where the nature of the soil and constant exposure to sunlight promote balanced vine development. The local microclimate, characterized by warm days moderated by constant breezes rising from the coastline of north-eastern Sardinia, plays a decisive role in developing intense, fresh and multifaceted aromas in the grapes.

The harvest is carried out entirely by hand, a crucial stage during which the winemakers perform a rigorous selection of the grapes directly in the vineyard, picking only perfectly healthy fruit that has reached optimal ripeness. In the winery, the vinification process follows traditional principles designed to enhance the pure expression of the raw material, without unnecessary technological intervention. The grapes undergo gentle pressing to extract the highest-quality free-run must, which is then sent for alcoholic fermentation at a controlled temperature in stainless-steel tanks. The decision to use stainless steel throughout the production and ageing process reflects the precise intention of preserving the wine's vibrant natural acidity and fruit freshness, allowing it to mature gradually on its own lees before final bottle stabilization.

Visually, the wine displays a bright straw-yellow colour, enhanced by greenish reflections that testify to its youth and structural freshness. The aromatic impact is intense, immediate and distinctly expressive of its terroir: it opens with fragrant notes of apple and white-fleshed fruit, harmoniously combined with hints of yellow flowers and citrus, resting on a characteristic background reminiscent of the wild herbs of the Mediterranean scrubland. On the palate, it reveals a highly pleasant and dynamic white wine, in which the softness of the body is balanced by lively acidity and a distinctly saline, maritime character. The sip is fluid and deep, leading to a clean, mineral finish with the characteristic, slightly almond-like aftertaste. This combination makes it ideal with seafood appetizers and shellfish, as well as more substantial fish-based pasta dishes and fresh cheeses.
