PRODUCTION AREA: Sella & Mosca Alghero, dial Southeast characterized by light soils, sandy, wind formation and limestone of ancient marine depositions.
HARVEST TIME: Mid-September to early Sauvignon and early October for the late Torbato.
VINIFICATION: soft pressing is carried out for both varieties the grapes harvested in the cooler hours of the day and with the shortest interval between the collection and the introduction in the cellar. A short maceration, conducted rigorously cold, promotes disposal of variety components before the separation of the skins from the must carried out by light pressing. The must is clarified by cold settling, it leads to the stage of fermentation for a period of 20 days in French oak barrels. Subsequently, after a period of batonnage, Ie two varietal components come together for a brief "pass" in acacia barrels. Particular attention is paid to the non-occurrence of malolactic fermentation after completion of the alcoholic.
COLOUR: brilliant deep straw with golden flashes advances.
BOUQUET: intense, complex, full, it reveals a source from overripe grapes with pronounced hints of honey of acacia flowers and broom, in the presence of a varietal background topped by vanilla oak notes.
TASTE: soft, rich, sumptuous, shows immediately a beautiful structure accompanied by fullness and persistence. The complexity of the nose is confirmed by warm feelings and calls to exotic flowers and fruits with vanilla integrations and a slight return of toasted tones of barrels, with a final taste of great cleansing.
ALCOHOL CONTENT: 13.5% vol.
HERITAGE ACID: 5.8 g / l.
HOW TO SERVE: in glasses full width at 10-12 ° C.
