Vinification

After harvesting the grapes in crates, these are deraspate and sent to macerate for about 16-18 hours in the tank vinification at a temperature of about 8 degrees. After the initial cleaning and pressing, the selected yeasts are inoculated and the must is moved to the fermentation at a temperature of 14 degrees for about 2 weeks
