Gran Sepi is a highly matured Sardinian Pecorino cheese, the result of the cheesemaking expertise of Sepi.

Made exclusively from whole Sardinian sheep's milk, it stands out for its compact and crumbly paste, which develops an intense straw-yellow colour as maturation progresses. With a bold and savoury flavour, it offers complex aromatic notes and a pleasantly spicy finish, typical of full-bodied cheeses.

Its minimum maturation period of 90 days defines its structure, making it excellent both as a table cheese, served in flakes, and as a fine grating cheese for pasta dishes. The ridged rind is treated and not edible.

Discovering Gran Sepi means embarking on a sensory journey into the heart of the most authentic Sardinia, a land of long maturation periods and intense, bold flavours. This highly matured Pecorino cheese made from Sardinian sheep's milk, expertly produced by Sepi Formaggi, embodies the history and resilience of the island, standing out as a true gastronomic excellence renowned for its intensity and versatility.

Its production begins with the careful selection of pasteurised whole sheep's milk, sourced exclusively from local sheep raised on pastures that reflect the healthy environment and rich spontaneous flora of the region. This attention to the raw material is the first step in ensuring a product of superior quality, in which every ingredient contributes to the final harmony of this complex cheese. Sepi, with expertise passed down through two generations of cheesemakers, combines traditional processing methods, inspired by the ancient art of cheesemaking, with rigorous modern controls throughout the production chain, ensuring the integrity and safety of the finished cheese.

The choice to produce large wheels, weighing an average of 6–6.5 kg — hence the name "Gran" — is crucial to the maturation process, allowing the cheese to develop slowly and deeply, concentrating intense aromas and a unique flavour. The production of Gran Sepi follows carefully defined stages that shape its texture and flavour. After the milk coagulates, the curd is pressed into moulds that give the cheese its characteristic cylindrical, basket-patterned shape and distinctive ridged, firm rind.

The crucial stage is maturation. Gran Sepi Pecorino is matured for a minimum of 90 days, often extending to six months or longer, in rooms where temperature and humidity are carefully controlled. This prolonged maturation gives the cheese a hard, compact and crumbly paste, which develops characteristic straw-yellow hues as it matures. The paste has sparse eyes, a sign of careful processing.

The aromatic profile of Gran Sepi is bold, intense and deeply aromatic. On the palate, its intense and savoury flavour gradually develops into a pleasantly spicy and assertive character, highly appreciated by connoisseurs.

The outer rind is ridged and brownish in colour. It is surface-treated with preservatives (E202, E235) and colouring agent (E150d). For this reason, the rind is not edible and must be carefully removed before consumption. This warning ensures consumer safety and allows only the noblest and most flavourful part of the cheese to be enjoyed.

The versatility of Gran Sepi Pecorino makes it a staple of Italian gastronomy. It can be enjoyed as an excellent table cheese, served in flakes or cubes, or used as a refined ingredient to enrich salads and appetisers. Thanks to its hard and crumbly texture, it is also exceptional as a grating cheese, adding rich savouriness and an unmistakable aromatic touch to pasta, risottos, soups and broths. For a wine pairing that enhances its robust character, it is recommended with mature, full-bodied Sardinian red wines.
