Ai Posteri - Murales

The Ai Posteri wine from Cantina Murales expresses the intensity of Gallura's winemaking tradition, a region of north-eastern Sardinia historically suited to viticulture, which the winery interprets with a rigorous style. This Sardinian red wine comes from hillside vineyards exposed to steady winds, where the vines take root in decomposed granite soils, a pedoclimatic factor that gives the grapes remarkable aromatic concentration. The winery's philosophy is based on respect for the natural cycle and meticulous vineyard management, with low yields per hectare aimed at prioritising the absolute quality of the raw material. The grapes are harvested entirely by hand, with the best bunches carefully selected so that only perfectly phenolically ripe fruit reaches the winery.

The red-wine vinification follows a rigorous protocol designed to extract the maximum polyphenolic richness from the skins through prolonged maceration at controlled temperature. The subsequent maturation process includes a crucial stage in French oak barriques, where the wine rests for several months, undergoing malolactic fermentation and consolidating its complex structural framework. Carefully controlled contact with the wood softens the original tannic structure and enriches the wine with beautiful tertiary nuances. Before release, the wine undergoes bottle stabilisation in the estate's underground cellars, an essential step in achieving the perfect balance between softness and alcohol.

The name Ai Posteri evokes the winery's ambition to create a long-lived wine, designed to stand the test of time and pass on the great traditions of Sardinia. The artistic concept of Murales is reflected in the attention to detail of the packaging, designed to communicate the deep connection between terroir and craftsmanship. Its extraordinary ageing potential makes this bottle an ideal choice for enthusiasts who enjoy discovering how aromas evolve over the years, placing it among the most intriguing age-worthy red wines of the island.

In the glass, it displays a deep, dense ruby-red colour. On the nose, it reveals a broad and enveloping bouquet, dominated by aromas of ripe red berries and morello cherry, followed by elegant spicy nuances of black pepper and liquorice. On the palate, it is sumptuous, warm and velvety. It is characterised by impeccable harmony between its aromatic and gustatory profile and an intense, persistent finish with hints of dark cocoa. At the table, it pairs ideally with hearty dishes such as game meat, wild boar stews and aged Sardinian Pecorino, reaching its full potential when enjoyed slowly at the end of a meal to appreciate its structural complexity.
