Chimbanta - Dettori - Sardinian food

Features of Sardinian biodynamic wine:

Created to celebrate the fiftieth anniversary of the father of the owner, Paolo. To him we dedicate this wine Chimbanta that in Sardinian means fifties. A kent'annos (To one hundred years). All our wines need time, when opened, to express themselves. Leave the bottle to rest after transport. The wine was not filtered or clarified. All residues are natural.

Production process: The grapes are harvested by hand and transported in crates in our Refrigerated Truck Fiat 100. The grapes are de-stemmed and macerated only for ten days at a controlled temperature. Decanting and maturation take place in small concrete tanks until bottling in May / June. The wine was neither fined nor filtered or stabilized. Bottled by hand. Once bottled the wine is aged in a warehouse at a strictly controlled temperature.

Wine fully produced and bottled at the origin in the production area by Dettori, Sennori (SS), Sardinia. Italy.
