Su callu 'e crabittu is a cheese of an ancient tradition, with rare and unique crafted production. There are not so many shepherd who still continue to produce it, maintaining the original technique, which it'ss considered to be a real delicacy.
For its preparation, the abomaso young goat, or the fourth stomach of a ruminant, is filled with raw goat milk, for drying is placed together with the coagulated milk, located in its interior. The aging lasts from two to four months, then you get a creamy, spicy and intense flavors. It goes well with full-bodied red wines, a few botrytized valuable, perhaps accompanied with carasau.
