Pecorino Sardo presents two types: sweet and ripe. Both have a cylindrical shape with flat faces and straight side or slightly convex, 6-10 cm high, diameter of 15-18 cm and weighing between 2 and 2.5 kg.
Features:
Pecorino Dolce features white crust or tending to pale straw, smooth and thin; the compact texture or with small holes, white in color. Mild flavour, sweet, aromatic and slightly acidic.
The ripe type is defined by a smooth rind, firm, brown in color. The texture is white or pale yellow, thin and compact with small holes, soft and elastic, which eventually acquires a more hard and firm texture, with some graininess. The taste initially slightly marked but full, as ripening progresses it becomes pleasantly spicy.
This particular cheese is excellent served natural, cut into slices or slivers along with the aging. The sheep's milk cheese with more delicate flavor can accompany salads of raw mushrooms, garden peas with butter or steamed asparagus. Those more intense flavor can be serve with roasted chestnuts, stewed artichokes, Jerusalem artichokes sautéed, fried eggs.
Pairings:
Pecorino Sardo Dolce goes well with medium bodied white wines such as Vermentino di Sardegna or with a Nuragus of Cagliari. Mature Pecorino harmonize with red wines of medium aging, an excellent example may be the Cannonau di Sardegna or Bovale of a good body.
