Features:
Whey Sardinian sheep. Savory flavor with notes animals. Commonly known as Mustia, using grated to flavor pasta, soups, polenta. It goes well with tomatoes, potatoes and salad dressings.
The ricotta Mustia has a cylindrical shape, slightly truncated-conical (moliterna), with a height of about 13 cm, diameter of 16 cm. The crust is almost nonexistent, clear, color variable with aging.
It is compact and, if grating, rather hard and aromatic flavor.
For the preparation of cottage cheese is used the residual whey of sheep's milk cheese. After the outcrop of the clot, the mass is left to harden for about 30 minutes on the surface of the whey, so that the heat to get the substance more compact and harder.
Subsequently it is placed in the molds or on sheets, following the pressing, and finally salting, which are dry. This is followed by the smoking in the rooms of aging.
Ricotta Mustia flavor the summer salads, rich in vegetables such as tomatoes, radishes and corn, is also excellent for cold salads of rice and pasta. Can replace the cheese grater for pasta with tomato sauce, both raw and cooked, or pasta dishes with vegetables.
It goes to the white of the body like the Vermentino di Gallura, Tocai, holds up well Monica di Sardegna or Vernaccia di Oristano.
