Peppered pecorino cheese made by the great cheesemaker Argiolas Formaggi
Peppered pecorino cheese, washed dough, elastic and firm. White straw color, sweet taste and aroma.
Argiolas Formaggi is a dairy company at the forefront in the production of typical Sardinian cheese, using only milk from local sheeps and goats. The plant is located in the hills of Dolianova, in the countryside.
The milk of the Sardinian herds, is subjected to a waiting period, depending of the type of processing. It follows the preparation of the curd. Rennet is added to milk. The curd thus assumes the appearance of a white, gelatinous mass, from which comes the serum, from which is derived the ricotta. The curd is then fragmented, it is then left to stand briefly, and is collected in molds.
The molds are put under pressure and turned frequently. Then, the forms are salted, before immersing in salt water, then rubbing them with salt on the surface.
Lastly, the seasoning: the wheels are aged in rooms at about 12 degrees for a few months a more flavorful cheese.
