The cheese name comes from the Latin Formaticum, so, it has a form. The cheese is defined by the Italian law - the product derived from milk (cow, goat, buffalo and sheep) whole or semi-skimmed milk, or from the cream after its coagulation, using enzymes and salt -
Il Colle is a Sardinian pecorino cheese, partially cooked, compact, slightly straw-colored look and slightly elastic, with a sweet and aromatic taste, slightly acidic. The fat in dry matter is minimum 35%
The mature pecorino cheese has a cylindrical shape with flat faces with bare right. Its paste is white, with the progression of aging it gains the straw color. The paste is rather compact with sparse holes, strong taste and pleasantly spicy. The rind of mature pecorino cheese is smooth and consistent, generally brown in color, in the more mature forms. Forms of pecorino have a seasoning of no less than two months; and weigh about 3 kg.
