Filindeu - Inke - Sardinian food

The Filindeu is a pasta of the pastoral tradition of Barbagia, it is still prepared for the feast of St. Francis of Lula, which is offered to the pilgrims gathered in the courtyard of the church.

Filindeu - Inke - Products of Sardinia

Preparation of Filindeu is complex and there are now very few women who guard the tradition. It is producing a dense network of filaments of durum wheat, a kind of fine fabric that is done then dried for a long time. It is cooked in mutton broth degreased, full of potatoes, onions, celery and tomatoes, chopped fresh pecorino is added after cooking.

The fundamental characteristic of the Filindeu, is its processing: unenforceable entirely by hand, from an initial roll of dough, folded several times on itself, are obtained 256 thin wires, which are laid on a sieve plate, made of natural fiber, where the dough will dry out.
