CLIMATE - Mediterranean, with relatively mild winters. Summers are hot and dry, characterized by a remarkable north-westerly wind.
HARVEST - Manual harvesting that begins at the end of September and ends the first days of October. The grapes are placed in boxes and taken directly to the cellar.
VINIFICATION - The grapes, once de-stemmed and crushed, are macerated in cold for 2 - 3 days in stainless steel tanks, after this phase with the increase in temperature, the fermentation starts which will last around 15-17 days temperatures ranging from 25 to 30 ° C, during this period the frequent pumping over favors the passage in the must of the noble tannins of which Carignano is particularly gifted. Once the alcoholic fermentation is finished, the must-wine remains on the skins for a further post-fermentative maceration, after which the wine is decanted in large Slavonian oak barrels, where it will be refined for a minimum of 12 months, during which it undergoes an evolution in biochemical, chemical-physical and organoleptic terms. In this phase there will also be malolactic fermentation. After bottling, the wine will refine at least 6 months in bottle allowing a further development of the bouquet.
