Half-cooked Sardinian cheese made by Monte Accas, in the Sulcis area.
Features:
Half-mixed goat and sheep cheese is similar in composition to the traditional but has in its composition a relatively small percentage of goat milk. Also served at various levels of aging. His fresher version, by three months of aging, it has a delicate flavor, sweet, aromatic and slightly acidic.
The aged type is defined by a smooth rind, compact, brown in color. The texture is white or pale yellow , thin and compact with small holes, soft and elastic, which eventually acquires a more hard and solid composition, with some graininess. The taste initially slightly, marked but full, during the aging progresses it becomes pleasantly spicy.
This particular cheese is excellent served natural, cut into slices or slivers second seasoning. The pecorinos with more delicate flavor can accompany salads of raw mushrooms, garden peas with butter or steamed asparagus. Those with more intense flavor can be served with roasted chestnuts, stewed artichokes, sautéed Jerusalem artichokes, fried eggs.
Wine pairings:
The half-mixed goat cheese, quite young, goes well with medium bodied white wines such as Vermentino di Sardegna or with a Nuragus of Cagliari. His mature version harmonize with red wines of medium aging, which an excellent example may be the Cannonau di Sardegna and a strong bodied Bovale.
