The range of preserved vegetables in oil by Campus Conserve is produced in Decimoputzu, in the heart of an area historically renowned for artichoke cultivation. Now in its third generation, the Campus family devotes meticulous care to every stage of the supply chain, starting with locally grown, exceptional-quality raw materials.
The cornerstone of production is fresh processing: the artichokes are harvested at the peak of their organoleptic qualities and processed within a very short time. This rapid approach is essential to ensure a crisp and firm texture, preventing the artichoke hearts from losing their natural freshness. Manual selection allows only the most tender buds to be chosen, which are then carefully trimmed to remove the tougher outer fibrous parts.
The artichoke hearts undergo a traditional marinade using lemon juice and wine vinegar, a deliberate choice that reflects the identity of a preserving company committed to natural methods and excludes the use of synthetic acidity regulators. The preserving liquid, consisting of a blend of 100% Italian extra virgin olive oil and sunflower oil, protects the vegetable while maintaining the bright, light color that distinguishes premium-quality products.
