Argiolas Formaggi is a dairy company to the forefront Dolianova, in the production of typical Sardinian cheese. They use only local sheep's and goat's milk. The plant is located in the hills of Dolianova, in the countryside.
The milk of Sardinian flocks, is subjected to a waiting period on the basis of the type of processing. It follows the preparation of the curd. Animal rennet is added to milk. The curd thus assumes the aspect of a gelatinous white mass and from which comes out the serum, from which is derived the ricotta. The curd is then fragmented, then is left to stand briefly, and is collected in molds or molds.
Sardinia can be defined as the island of cheese, it has a sheep population of more than 3 million head and places the company at the top of the Italian production of dairy products of pecorino; also, we count just under 300 thousand goats leaders and a quite consistent number of diary vaccines leaders.
