The minimum maturation period of 60 days (and often longer) gives it an unmistakable character: the paste is hard and compact, straw yellow in colour, with a texture that may feature sparse eyes. Recognised as a Protected Designation of Origin (D.O.P.) at European level, this cheese is the result of an inseparable connection between the product, its place of origin and the expertise of Sardinian master cheesemakers.
The Essence of D.O.P. and Controlled Supply Chain: The D.O.P. designation is not merely a mark, but a guarantee that Pecorino Sardo Maturo is produced exclusively with whole sheep's milk from farms located throughout the territory of the Sardinia Region. The quality of the milk is exceptionally high, thanks to a diet based predominantly on direct grazing on natural pastures, meadows and forage crops typical of the island. Constant supervision by the Protection Consortium ensures that every stage of the production process, from milking to maturation, takes place in accordance with the official regulations, guaranteeing the highest level of certified quality and compliance with European food hygiene and safety standards.
Production Method and Characteristics: The milk, which may be pasteurised or thermised, undergoes a crucial coagulation stage using calf rennet at a controlled temperature. The curd is then cut until it reaches the size of a grain of corn, characteristic of the "Maturo" variety, and subjected to semi-cooking at a temperature not exceeding 43°C. After moulding and pressing to ensure optimal whey drainage, the cheese is salted either in brine and/or dry-salted. The "Maturo" variety is distinguished by its maturation, which lasts for a minimum of two months in specially equipped rooms with controlled temperature and humidity (between 6°C and 12°C).
This process gives the cheese its definitive structure: a smooth, firm rind, ranging in colour from light to dark brown, and a hard, compact paste, white or straw yellow in colour, with sparse eyes.

As maturation progresses, the flavour becomes strong, aromatic and pleasantly spicy, leaving a distinctive lingering sensation on the palate.
