Pecorino Sardo D.O.P. Mature - Whole Wheel 3.2 kg - Sepi - Marrubiu

SE0000001

Pecorino Sardo D.O.P. Mature - Sepi

The Pecorino Sardo D.O.P. Maturo by Sepi Formaggi is the most intense expression of the island's cheesemaking tradition. This Protected Designation of Origin cheese guarantees the exclusive use of whole Sardinian sheep's milk, following the strict production regulations requiring it to be made throughout the territory of Sardinia.

The minimum maturation period of 60 days (and often longer) gives it an unmistakable character: the paste is hard and compact, straw yellow in colour, with a texture that may feature sparse eyes. The flavour is intense and highly aromatic, developing a pleasantly spicy note as maturation progresses.

It is an excellent table cheese for refined tastings and, thanks to its texture, an outstanding grating cheese for enhancing traditional Sardinian dishes. Quality is ensured by the constant supervision of the Protection Consortium.

Description

Pecorino Sardo D.O.P. Maturo - Sepi

Coming into contact with Pecorino Sardo D.O.P. Maturo by Sepi Formaggi means tasting an authentic piece of Sardinia's agricultural and food heritage. Recognised as a Protected Designation of Origin (D.O.P.) at European level, this cheese is the result of an inseparable connection between the product, its place of origin and the expertise of Sardinian master cheesemakers.

The Essence of D.O.P. and Controlled Supply Chain: The D.O.P. designation is not merely a mark, but a guarantee that Pecorino Sardo Maturo is produced exclusively with whole sheep's milk from farms located throughout the territory of the Sardinia Region. The quality of the milk is exceptionally high, thanks to a diet based predominantly on direct grazing on natural pastures, meadows and forage crops typical of the island. Constant supervision by the Protection Consortium ensures that every stage of the production process, from milking to maturation, takes place in accordance with the official regulations, guaranteeing the highest level of certified quality and compliance with European food hygiene and safety standards.

Production Method and Characteristics: The milk, which may be pasteurised or thermised, undergoes a crucial coagulation stage using calf rennet at a controlled temperature. The curd is then cut until it reaches the size of a grain of corn, characteristic of the "Maturo" variety, and subjected to semi-cooking at a temperature not exceeding 43°C. After moulding and pressing to ensure optimal whey drainage, the cheese is salted either in brine and/or dry-salted. The "Maturo" variety is distinguished by its maturation, which lasts for a minimum of two months in specially equipped rooms with controlled temperature and humidity (between 6°C and 12°C).

This process gives the cheese its definitive structure: a smooth, firm rind, ranging in colour from light to dark brown, and a hard, compact paste, white or straw yellow in colour, with sparse eyes.

Flavour Profile and Texture: Pecorino Sardo D.O.P. Maturo offers an intense sensory experience. As maturation progresses, the flavour becomes strong, aromatic and pleasantly spicy, leaving a distinctive lingering sensation on the palate. The paste is grainy and crumbly when cut, making it a highly prized cheese both as a table cheese and for cooking.

Tradition and Recommended Pairings: This cheese represents the highest expression of the Sardinian cheesemaking tradition, with historical references dating back to the 18th century. In the kitchen, its bold flavour makes it perfect served in pieces or in shavings on a cheese and cured-meat board. It is also sublime as a grating cheese for seasoning robust traditional dishes such as malloreddus or culurgiones. The ideal wine pairing is an equally structured and distinctly Sardinian wine, such as Cannonau di Sardegna or a red Carignano del Sulcis. With two generations of experience, Sepi Formaggi guarantees a product that honours the D.O.P. designation and the distinctive quality of Sardinia.
