Immersing yourself in the flavour of L'Ovile Gavoi by Sepi Formaggi means embarking on a sensory journey into the authentic heart of Sardinia, a land where sheep farming is not merely a profession, but a millenary way of life. Sepi Formaggi, based in the Campidano area of Oristano, preserves this heritage by skilfully combining traditional cheesemaking techniques with modern standards of hygiene and quality.

L'Ovile Gavoi is made exclusively from whole sheep's milk sourced from Sardinian farms, a high-quality raw material that carries the intense aromas and fragrances of the wild herbs growing in the island's pastures. Its very name, evoking the sheepfold, highlights its strong connection with the rural environment and the authenticity of pastoral life. The production process follows meticulous steps designed to enhance the strength and structure of sheep's milk. The process begins with milk coagulation, followed by cutting the curd and moulding it into wheels that acquire their characteristic cylindrical and compact shape. The true secret of L'Ovile Gavoi lies in its long maturation. This crucial stage, which defines the cheese's character, takes place in environments with controlled temperature and humidity, where time shapes both flavour and texture. During this prolonged maturation, the initially soft paste transforms into a hard and grainy texture that breaks into perfect shavings when cut.

On the outside, the wheel has an olive-brown rind (treated with preservatives to protect the cheese during maturation and therefore not edible), enclosing an interior ranging in colour from white to intense straw yellow. The paste, without eyes, reflects the concentration of flavour typical of extra-aged cheeses. On the nose, L'Ovile Gavoi offers an aromatic, savoury fragrance that immediately evokes the characteristic scent of the flock and its native land. On the palate, the experience is bold: its intense flavour is accompanied by a pleasantly spicy note that becomes more pronounced as the months of maturation increase. This combination of savouriness and spiciness gives the cheese great personality, making it particularly appreciated by lovers of robust products.

Although the name "Gavoi" recalls the historic area associated with Fiore Sardo DOP (an ancient cheese traditionally made from raw milk), L'Ovile Gavoi is a distinct aged pecorino cheese selected by Sepi, celebrating the Sardinian countryside and the rigorous production traditions of Barbagia and Campidano. Thanks to its hard paste and persistent flavour, L'Ovile Gavoi is extremely versatile. It is excellent as a table cheese, enjoyed on its own or on a cheese board paired with dark honeys (such as strawberry tree honey) or fig and pear preserves, which create a wonderful contrast with its savoury character. Its texture also makes it ideal for grating, becoming a secret ingredient for enriching risottos, seasoning traditional Sardinian pasta dishes, or adding an aromatic and spicy touch to soups and broths.

For a perfect regional pairing, we recommend a robust, full-bodied red wine such as Cannonau di Sardegna.
