The Sepi Semi-Aged Goat Cheese is a Sardinian table cheese with a bold character, made exclusively from pasteurised goat's milk.

Its minimum ageing period of 60 days develops an intense and aromatic flavour, with the characteristic goaty note typical of goat cheese becoming progressively more pronounced, leading to a pleasantly spicy finish.

The paste is straw yellow, compact, with a texture that evolves from grainy to crumbly.

Perfect for those seeking a strong flavour, it pairs beautifully with robust red wines such as Cannonau and with sweet-and-sour preserves.

Semi-Aged Goat Cheese – Sepi

There is a sublime meeting point between the purity of fresh milk and the complexity created by time: this is the Semi-Aged Goat Cheese by Sepi Formaggi, a Sardinian cheese that celebrates the island's cheesemaking tradition with a savoury and intense character. Produced in the heart of Sardinia, in the Campidano area of Oristano, it represents the authentic flavour of the island, made from pasteurised goat's milk sourced from selected and controlled farms in Italy. Choosing goat's milk is the first step towards a bold and unmistakable taste experience.

The production process, carried out by master cheesemakers with dedication spanning two generations, follows strict hygiene standards and uses only essential ingredients: whole goat's milk, salt and rennet. The crucial stage is the minimum ageing period of 60 days (two months), the time required for the cheese to develop its most appreciated organoleptic characteristics, transforming the paste from soft to semi-hard. This controlled ageing allows the aromas to concentrate and the texture to evolve.

The appearance of the Semi-Aged Goat Cheese is distinctive: the wheel is cylindrical with flat faces, covered by a smooth, firm rind which, as maturation progresses, develops a colour ranging from light to dark brown. Inside, the paste has a uniform straw-yellow colour, indicating proper maturation, with a sparse, evenly distributed eye formation. The texture is initially grainy and progressively becomes more crumbly, a sign of excellent ageing.

It is during tasting that the Semi-Aged Goat Cheese reveals its full personality: its flavour is savoury and aromatic, dominated by the characteristic goaty flavour of goat's milk, a distinctive trait particularly appreciated by connoisseurs. The aromas and flavours become richer as maturation progresses, giving the palate a slightly spicy sensation that stimulates and surprises, with a long-lasting finish. This bold flavour profile makes it an excellent table cheese, ideal for enjoying on its own in order to appreciate its intensity.

Its versatility, however, also shines in the kitchen. It is excellent when cut into shavings to enrich elaborate salads or cold dishes, while its crumbly texture makes it perfect for grating over pasta or risotto, adding a unique Sardinian and aromatic touch. The recommended pairings further enhance its character: it pairs wonderfully with the full-bodied character of Cannonau di Sardegna or other structured red wines that balance its savouriness. For those who enjoy sweet-and-savoury contrasts, it is exceptional with sweet-and-sour preserves or apple and fig jams, which soften the slightly spicy finish.

An important piece of information for consumers concerns the external treatment of the rind. To ensure preservation and maximum safety, the rind is surface-treated with preservatives and colouring agents (E202, E235, E150d). Therefore, the rind is not edible and must be removed before consumption. This is essential for proper consumer information and customer protection.
