Features:

The meat, cut and unnerved, entirely by hand, is ground and then mixed with herbs and spices; the dough is left to rest in special aseptic rooms before being stuffed into natural casings. The product is gluten and lactose free.

It is a Sardinian seasoned sausage, made ​​from fresh pork, consistent and quality meat (pigs around 10 /12 months old, from 140/180 kg of weight). Its flavor is composed of a proper balance of fat and lean parts; the product is shaped in "horseshoe" shape, with average unit size of 400/550 gr.

The carefully selected fresh pork are chopped into pieces about the size of a cubic centimeter, mixed and flavored with different ingredients (salt, pepper, fennel and aromas that change from area to area) and stuffed into natural casings. The product is then drained and finally aged for a period ranging from 8 to 15 days depending on the consistency you want to achieve.
