Description

Noah - Cantine Paulis

The Noah wine represents one of the most prestigious labels of Cantine Paulis, the winery based in Monserrato that has been contributing to the winemaking excellence of Southern Sardinia for over a century. This Cannonau di Sardegna DOC is produced from selected vineyards where medium-textured soils and constant exposure to Mediterranean winds create the perfect microclimate for growing pure Cannonau grapes.

The production philosophy adopted by Cantine Paulis aims to enhance the extractive power and aromatic elegance typical of this variety, following an approach that combines the craftsmanship of the winemakers with cutting-edge winemaking techniques. During the harvest, the bunches are carefully selected to ensure that only the finest grapes reach the winery, where temperature-controlled maceration begins, designed to extract polyphenols and colouring compounds in a balanced manner.

An interesting fact about this wine is its place within the Linea di Personalità, a range created to celebrate the untamed and proud character of the island's wines, of which Noah is an exceptional ambassador. The name itself evokes a sense of authority and solidity, reflecting the structure of a red wine that displays an intense ruby-red colour, with reflections that evolve towards garnet as it matures. On the nose, the bouquet is broad and enveloping, with dominant notes of Morello cherry, ripe plum and delicate hints of aromatic herbs typical of the Mediterranean maquis.

On the palate, Noah reveals all its nobility: it is warm and savoury, characterised by remarkable flavour and aromatic persistence, leaving a trail of sweet spices and toasted notes. The product's compliance with the strict regulations governing the Denominazione di Origine Controllata (DOC) guarantees an authentic sensory experience, faithfully reflecting a production chain that values the work of the Paulis family and the local community.

This wine is an ideal match for hearty Sardinian cuisine, such as suckling pig roasted on a spit, braised red meats and aged cheeses. It is also excellent as a contemplative wine, thanks to its smooth and seductive character. Choosing Noah means bringing to the table the thousand-year-old history of Sardinian winemaking, backed by a winery that has made consistent quality and respect for the territory its primary mission, offering an authentic wine capable of developing beautifully over time.
