Description

Onyx - Galavera

Galavera operates in the heart of Logudoro, a landscape characterised by limestone hills and constant sea breezes. The Onyx wine takes its name from the precious stone, evoking its deep colour and the preciousness of its contents. Production is concentrated in the Pirapeglias area, where the particular composition of the soil, rich in minerals and clay, gives the grapes exceptional sugar and polyphenolic concentration. The producer’s philosophy is rooted in respect for biodiversity: every stage of cultivation, from winter pruning to canopy management, is aimed at maintaining the natural balance of the vines, allowing the grape variety to express its true sense of place without forcing it.

The hand harvest is the crucial moment in the creation of Onyx. Only bunches that have reached perfect phenolic ripeness are selected for this wine, ensuring an exceptionally high-quality starting point. In the cellar, the artisanal winemaking process continues with slow fermentation and prolonged maceration, essential for extracting the wine’s complex tannic structure and the characteristic aromas of the variety. Twelve months of ageing in French oak are not intended to overpower the fruit, but rather to soften its edges and enrich the bouquet with notes of black pepper, tobacco and leather, which blend harmoniously with the typical aromas of wild berries and morello cherry.

On the palate, Onyx reveals an imposing yet remarkably refined structure. The opening is warm and enveloping, characterised by silky tannins that coat the palate without ever becoming aggressive. The natural savoury character of the Usini terroir emerges on the finish, bringing a balsamic persistence reminiscent of the wild herbs of the Mediterranean maquis. This complexity makes the wine ideal with the great classics of Sardinian cuisine, such as game, braised beef or pecorino cheeses aged for more than twelve months. It is a wine capable of evolving beautifully over time, developing even greater elegance when stored correctly in a cool place away from light.

One of the curiosities surrounding this wine lies in the Galavera family’s deep connection with its roots: Onyx is considered the “guardian” of the family tradition, a bottle created to stand the test of time and tell the story of a proud territory that refuses to compromise with industrial practices. Choosing this Isola dei Nuraghi IGT means bringing to the table the energy of northern Sardinia, combined with the expertise of a winemaking tradition that understands the importance of allowing the long ageing process needed to achieve perfection. Every sip is an invitation to discover the most authentic Sardinia, shaped by limestone rocks, intense sunshine and a dedication to the land passed down from generation to generation with passion and expertise.
