Bisai is a great Sardinian white wine made of overripen grapes, by Audarya, Serdiana.

Classification: Wine from overripe grapes with a typical geographical indication
Provenance: Audarya vineyard
Soil: calcareous-clay soils at 200 meters above sea level
Climate: Mediterranean, low winter rainfall and ventilated and sunny summers
Average age of the vines: 20 years
Training system: low espalier tree, plant density 5000 plants per hectare and 35-40 quintals production

Withering: natural with the cutting of the fruit head on the supporting wire

Harvest: manual in small baskets of 10Kg each and sorting of the grapes upon arrival in the cellar. Second decade of October.

Vinification: maceration on the skins for 36 hours, soft pressing and slow fermentation in temperature-controlled steel vats.

Organoleptic characteristics:

    Color: intense golden yellow
    Smell: dehydrated apricot, millefiori honey and Mediterranean scrub
    Taste: sweet and well balanced, with a natural freshness due to overgrazing

Storage: protected from light, with a horizontal bottle, temperature and controlled humidity 17 ° C - 70%. Serve cool at a temperature of 9-11 ° C
Pairings: Bisai goes very well with typical Sardinian sweets with almond paste, pine nuts and raisins
