Features:
Monte Accas Erborinato (Blue cheese) is a variant of the most widespread veined cow's milk. The small size of the forms promote the marbling, as a percentage of goat milk gives a more intense flavor, which blends beautifully with the strong-like intense aromas of the penicillium roqueforti.
The grain is ivory-colored, compact, bluish marbling moderately widespread. The taste is strong, intense, with pronounced notes of penicillium. It's recommended in conjunction with a full-bodied red wine, quite aged, or with the “passito”, a sweet wine.
