This cheese is suitable for vegetarians, because the rennet is of fungal origin, then the milk is not coagulated by animal rennet
It's a cheese of intense aroma and delicate taste. The crust is smooth, texture is semi-hard or soft according to the aging, color is light and there are few holes. It's made with uncooked sheep's milk, which preserves all the organoleptic properties of fresh milk, and because of this it isn not treated with thermisation. Moreover, the use of mushroom rennet, obtained from a strain and selected with careful craftsmanship, gives the cheese an aroma and a flavor typical of the land of Sardinia.
This organic pecorino cheese is particularly appreciated by all those who are following the vegetarian diet, and by those who, for religious faith, can not eat cheeses that use animal rennet or chymosin, and by people intolerant to pepsin, substance present in almost all cheeses.
