Lorighittas are a Sardinian typical pasta from Morgongiori, village located at the feet of Monte Arci. They are handprepared by twisting between the fingers a double strand of pasta to create a pigtail closed in a ring shape (loriga in Sardinian).
It is traditionally prepared for the feast of Tutti i Santi, with Cappelli durum wheat and water. It is normally dressed with a sauce of tomatoes and free-range chicken, or with simple tomato sauce and basil.
