Araj Classic Malloreddus are one of the most authentic expressions of Sardinia’s pasta-making tradition. Also known as the typical Sardinian gnocchetti, they represent a symbol of the island’s cuisine and still maintain a strong connection with the gastronomic culture of the Campidano, the region where this pasta shape originated and spread through generations.
Production by Araj begins with a raw material closely linked to the local territory: durum wheat grown in Sardinia, which is then stone-milled. This method produces semolina that retains the typical characteristics of the grain, enhancing the quality of the raw material from the earliest stages of processing. The name Araj, which in local tradition evokes the concept of a “fresh breeze,” reflects the company’s commitment to preserving a production approach deeply rooted in Sardinian identity.
One of the distinctive aspects of these Malloreddus is their production process. The dough is prepared using a cold-mixing process, a choice that allows the semolina to be worked without exposing it to high levels of thermal stress. The pasta is then bronze die-extruded, a traditional technique that gives the surface its characteristic roughness.
