Rhododendron Honey - “La Molinata” Beekeeping

The Rhododendron Honey produced by “La Molinata” Beekeeping is a rare and crystal-clear mountain delicacy, harvested exclusively at high altitude during the short summer flowering season in the Alps.

Characterised by a very light colour, which turns pearly white after natural crystallisation, this honey stands out for its extraordinary organoleptic delicacy.

Its aromatic profile is subtle, with floral and fruity notes reminiscent of white fruit jam.

Extracted through cold mechanical centrifugation to preserve its natural integrity, it is the ideal natural sweetener for those seeking a refined product that does not overpower other flavours. Perfect with yoghurt, delicate herbal infusions or mountain cheeses.

Description

Rhododendron Honey - “La Molinata” Beekeeping

The Rhododendron Honey produced by “La Molinata” Beekeeping is the result of a technical and environmental challenge that only a small number of beekeepers choose to undertake. Harvesting takes place at altitudes of over 1,200–1,500 metres, where the flowering of Alpine rhododendron is subject to the sudden weather changes typical of high mountain environments. This niche production requires extremely meticulous management of the apiaries, aimed at capturing the essence of a flower that blooms in extreme climatic conditions. Our company guarantees complete high-altitude traceability, bringing to the table a honey that is a pure expression of the crisp mountain air and the most pristine Alpine biodiversity.

Processing follows the highest standards of artisan tradition in order to protect the delicate nature of this honey. We use exclusively mechanical centrifugation at room temperature to extract the honey from the combs, avoiding any form of heating or pasteurisation. This process is essential for preserving the natural microcrystals and enzyme complex that define the product's superior quality. Rhododendron honey naturally tends to crystallise into a fine and creamy texture within a few months: this natural transformation is the hallmark of a living, unrefined food that retains all the delicate volatile nuances collected by bees among the Alpine pastures.

From a sensory perspective, “La Molinata” Rhododendron Honey is a honey of discretion and elegance. On the palate, it offers balanced sweetness that is never cloying, with a bouquet ranging from wildflowers to pear pulp and an exceptionally delicate finish. Its organoleptic stability makes it highly versatile in the kitchen, especially in preparations requiring a subtle, almost “invisible” sweetness. The decision to package every batch by hand ensures meticulous quality control and enhances the uniqueness of a harvest that can vary significantly from year to year, making every jar a unique sensory record of the Alpine season.

In gastronomy, rhododendron honey is the ideal companion for those wishing to enhance premium ingredients. It pairs beautifully with hard mountain cheeses, where its floral character creates a sophisticated contrast with the savoury richness of the milk. It is also excellent for sweetening mountain herbal infusions or premium white teas, as it enriches their structure without altering their colour or original aroma. Choosing this honey also means supporting a dedicated form of beekeeping that helps preserve fragile mountain areas, guaranteeing a short supply chain product that embodies the absolute purity of Italy's mountain peaks.
