Honeydew Honey - “La Molinata” Beekeeping

The Honeydew Honey produced by “La Molinata” Beekeeping represents one of the most fascinating varieties in our beekeeping production. Unlike traditional honeys made from flower nectar, honeydew is collected by bees from the leaves and trunks of trees during the summer season. This distinctive origin gives the honey a unique composition, characterised by a lower proportion of simple sugars and a higher density. Our company’s philosophy is based on the rigorous technical management of the apiaries, ensuring that every jar faithfully reflects the pristine biodiversity of the forest, without any industrial processing.

Production follows the principles of the most authentic artisan tradition in order to protect the integrity of the product. After harvesting, the honey is extracted from the combs exclusively through mechanical centrifugation at room temperature. This method is essential for preserving its natural enzymatic composition: the honey undergoes no pasteurisation or heat treatment that could alter its natural sensory characteristics. The subsequent natural settling process in stainless-steel maturation tanks ensures the clarity of the product while preserving the viscous, velvety texture that makes it so sought after by connoisseurs.

From a sensory perspective, “La Molinata” Honeydew Honey impresses with its complexity. Its flavour is rich and enveloping, with moderate sweetness balanced by a subtle saline note and aromas reminiscent of dried fruit and toasted wood.
