Azienda Agricola Maccioni Piero has made respect for the environment and the wellbeing of bees its distinctive hallmark. Located at the foot of the village of Cecina, in Larciano, the farm operates in a hilly setting where the flowering of Robinia pseudoacacia takes place in a protected environment far from sources of intensive pollution. Producing acacia honey is a challenge that Piero and Eva face every year with technical precision and meticulous observation of seasonal rhythms. As an early-flowering honey, it requires skilful hive management to ensure that the bee colonies are strong and ready at the precise moment of nectar secretion, resulting in a product that is as faithful an expression of the Tuscan territory as possible.

From a processing perspective, the company's approach is rigorously artisan. Once the honey supers have been collected, extraction takes place through cold mechanical centrifugation, a method that preserves all the original sensory characteristics of the honey. Unlike industrial production, the honey undergoes no thermal pasteurisation, thus preserving its aromatic integrity and natural richness of fragrances. Decanting takes place spontaneously in the maturation tanks, where air bubbles and any impurities rise to the surface, leaving a final product of crystal-clear transparency, an unmistakable sign of careful laboratory management that avoids overheating which could degrade its organoleptic properties.
