Chestnut Honey – Azienda Agricola Maccioni Piero

Azienda Agricola Maccioni Piero produces its chestnut honey following the rhythms of summer flowering between Montalbano and the surrounding mountain areas, where centuries-old chestnut groves provide bees with nectar rich in mineral salts and aromatic compounds. This variety is usually harvested between June and July, a period during which Piero and Eva carefully monitor weather conditions to ensure that the bees can collect the purest nectar. As a certified organic farm, every stage of the process takes place in areas far from intensive crops, ensuring that the foraging environment preserves the typical biodiversity of the Pistoia countryside.

The laboratory processing rigorously follows the principles of Sardinian and Tuscan artisan beekeeping. After the honey supers are removed, the honey is extracted through cold mechanical centrifugation, a technique that avoids thermal shock and preserves the complexity of its aromatic bouquet. Maccioni Piero's chestnut honey undergoes no pasteurisation, remaining a living food that retains all its original sensory characteristics. The naturally high fructose content of this variety prevents rapid crystallisation, maintaining a silky texture that makes it suitable both for enjoying pure and as a refined ingredient for sophisticated gastronomic pairings.

From an organoleptic perspective, organic chestnut honey ranges in colour from dark amber to deep brown, depending on the harvesting area. Its aroma is pungent, recalling tannins and wet wood, characteristic of woodland environments.
