The Acacia Honey produced by “La Molinata” Beekeeping is a fine example of Italian artisanal beekeeping, appreciated for its extraordinary clarity and delicate flavour.

Acacia Honey - “La Molinata” Beekeeping

The excellence of Acacia Honey from “La Molinata” Beekeeping stems from a deep dedication to the land and to the well-being of the bee colonies. This monofloral product is the result of careful selection of the bees’ foraging areas, located in settings where Robinia blooms abundantly and in pristine conditions. The company’s philosophy is based on producing a food that faithfully reflects nature, through rigorous technical hive management that respects the biological cycles of the colony and the seasonal characteristics of the area between the hills and the coast.

The honey extraction phase follows the principles of traditional artisanal processing. Once the honey supers have been collected, the honey is removed from the combs exclusively through mechanical centrifugation at room temperature. This step is essential to fully preserve the product’s original characteristics: the honey is not pasteurized and does not undergo invasive heat treatments that could compromise its aromatic profile. The subsequent natural settling phase in stainless-steel maturation tanks allows air bubbles and residual impurities to be removed, ensuring a crystal-clear appearance and a velvety texture on the palate.

From an organoleptic perspective, “La Molinata” Acacia Honey has a delicate aroma, reminiscent of white flowers and vanilla. Its flavour is typically sweet, with an extremely light, almost candied finish and no bitter or acidic aftertaste. This aromatic neutrality makes it an ideal companion for fresh cheeses, such as goat cheese or ricotta, as well as for more complex pairings with aged and blue cheeses, where it helps balance stronger flavours. In pastry-making, its ability to blend easily with other ingredients makes it perfect for preparing glazes, sauces and soft, moist batters.
