Description

Brianza Wildflower Honey - “La Molinata” Beekeeping

The excellence of the Brianza Wildflower Honey produced by “La Molinata” Beekeeping is the result of careful management of the apiaries located among the green hills of Brianza. Unlike monofloral honeys, wildflower honey is a faithful reflection of the season and local biodiversity, bringing together in every jar the nectar of different blooms whose composition varies from year to year. Our company’s philosophy is based on rigorous technical management that respects the natural biological rhythms of the hive, ensuring a product that expresses the pure and ever-changing nature of its surroundings, without industrial alteration or external blending.

The extraction process follows the strictest principles of artisan tradition in order to protect the product’s natural sensory qualities. Once the honey supers have been collected, the honey is extracted from the combs exclusively through mechanical centrifugation at room temperature. This step is essential for preserving its original characteristics in full: the honey undergoes no pasteurisation or heat treatment that could alter its aromatic profile. The subsequent natural settling phase in stainless-steel maturation tanks allows air bubbles to dissipate, ensuring a homogeneous appearance and a pleasantly creamy texture on the palate.

From a sensory perspective, Brianza Wildflower Honey has a complex floral aroma, with notes that may range from fruity to malty depending on the dominant blooms. Its flavour is typically sweet and lingering, with a richness of nuances that makes it suitable for every moment of the day. Its natural tendency to crystallise is a sign of purity and authenticity, transforming its initially liquid consistency into a finely granular texture that melts gently in the mouth, offering a sensation of freshness and integrity typical of cold-processed honeys.

In gastronomy, its versatility is unparalleled. It is the ideal companion for breakfast, perfect on rusks or in yoghurt, but it also lends itself to more sophisticated pairings with medium-aged cheeses or for enriching fresh fruit salads. In cooking, its ability to blend easily with other ingredients makes it ideal for preparing baked desserts and artisan biscuits. Choosing this honey means supporting a short supply chain and a family passion that guarantees complete traceability from the individual hive to the final packaging, celebrating the biodiversity of the hills in every spoonful.
