Organic Honeydew Honey – Tuscan Honey – 250 g Jar – Azienda Agricola Maccioni Piero

AAMP0000009

Honeydew Honey – Azienda Agricola Maccioni Piero

The Honeydew Honey produced by Azienda Agricola Maccioni Piero is a rare and intense organic speciality, harvested in the dense woodland areas of Montalbano during the summer months.

Unlike floral honeys, it originates from secretions produced by insects that feed on the sap of trees, which are then collected and carefully transformed by Piero and Eva's bees.

It has a very dark amber colour, almost black, and a dense consistency that does not crystallise easily.

Its flavour profile is unique: less sweet than traditional honeys, it reveals malty notes and hints of wet bark, offering a deep and mineral sensory experience, typical of the most sought-after artisan excellence of Tuscany.

Description

Honeydew Honey – Azienda Agricola Maccioni Piero

Azienda Agricola Maccioni Piero produces its honeydew honey during the warm days of July and August, when the absence of nectar-producing blooms encourages the bees to explore the tree canopies in the woodlands around Larciano. Honeydew is a complex product, the result of a natural two-stage transformation that requires a perfectly balanced ecosystem. Through their organic farming practices, Piero and Eva ensure that this process takes place in pristine environments, where the forest biodiversity of the Pistoia area can flourish without chemical interference. This close connection with the woodland gives the product remarkable organoleptic purity, making it one of the varieties most appreciated by connoisseurs for its rarity and unconventional harvesting method.

The processing in the laboratory follows the principles of traditional artisanal beekeeping. After the honey supers are collected, the honey is extracted through cold mechanical centrifugation, a crucial step that preserves its dense structure and its dark, enveloping aromatic bouquet. Maccioni Piero's honeydew honey is not pasteurised, remaining a living and unaltered food, rich in all the mineral nuances extracted from plant sap. Its natural chemical composition, low in glucose but rich in complex sugars, gives it a natural resistance to crystallisation, maintaining a glossy, viscous fluidity that makes it visually similar to a fine molasses.

From a sensory perspective, this organic honeydew honey stands out for its pungent aroma reminiscent of resin, burnt caramel and woodland undergrowth. On the palate, its sweetness is restrained, giving way to a persistent mineral, almost saline savouriness that refreshes and cleanses the palate. Its dark, velvety texture makes it a high-level culinary ingredient, particularly suitable for dishes requiring a strong aromatic counterpoint. It is not merely a sweetener, but a true flavour enhancer, capable of adding depth to richly structured dishes without overwhelming them with excessive sweetness.

Choosing this product means supporting a quality recognised through numerous successes in the "Tre Gocce d'Oro" (Grandi Mieli d'Italia) competition, where Piero and Eva's honeydew often stands out for its purity and intensity. In the kitchen, this honey pairs exceptionally well with Greek yoghurt, nuts and well-aged cheeses, where its malty notes create an unforgettable contrast. One interesting fact about honeydew honey is its popularity among athletes and nature lovers, who appreciate it for its density and less sugary taste compared with floral honeys. Every jar guarantees transparency and organoleptic quality, the result of a short supply chain and the passion of a family that lives in close harmony with its bees.
