Available almost all year round, the processing of the fish creates particular difficulties.

Thanks to the great experience gained over the years, we guarantee a product with exceptional taste. Cold-smoked swordfish has a unique taste.

Our smoked swordfish is worked in oil, and during processing is wrapped in leaves of myrtle, rosemary and bay leaves, which give it a really unique flavor and aroma.

The streaky (ventresca) undergoes a processing identical to that of the thread. Being the fatter part of the animal, however, differs for a slightly more decided taste.
