AAMP0000004

Chestnut Honey – Azienda Agricola Maccioni Piero

The Chestnut Honey from Azienda Agricola Maccioni Piero is a certified organic product with a bold character and unmistakable personality, typical of the wooded areas surrounding Larciano.

Distinguished by its intense dark amber colour and its fluid consistency, which remains liquid for long periods, this honey moves away from classic sweetness to offer a complex aromatic profile.

On the nose, it releases notes of wood and smoke, while on the palate it reveals a persistent flavour enriched by a pleasantly bitter finish.

It is the ideal choice for those seeking an authentic artisan product, capable of expressing the strength of Tuscany's wild flora and the expertise of a nationally award-winning beekeeping tradition.

Description

Chestnut Honey – Azienda Agricola Maccioni Piero

Azienda Agricola Maccioni Piero produces its chestnut honey following the rhythms of summer flowering between Montalbano and the surrounding mountain areas, where centuries-old chestnut groves provide bees with nectar rich in mineral salts and aromatic compounds. This variety is usually harvested between June and July, a period during which Piero and Eva carefully monitor weather conditions to ensure that the bees can collect the purest nectar. As a certified organic farm, every stage of the process takes place in areas far from intensive crops, ensuring that the foraging environment preserves the typical biodiversity of the Pistoia countryside.

The laboratory processing rigorously follows the principles of Sardinian and Tuscan artisan beekeeping. After the honey supers are removed, the honey is extracted through cold mechanical centrifugation, a technique that avoids thermal shock and preserves the complexity of its aromatic bouquet. Maccioni Piero's chestnut honey undergoes no pasteurisation, remaining a living food that retains all its original sensory characteristics. The naturally high fructose content of this variety prevents rapid crystallisation, maintaining a silky texture that makes it suitable both for enjoying pure and as a refined ingredient for sophisticated gastronomic pairings.

From an organoleptic perspective, organic chestnut honey ranges in colour from dark amber to deep brown, depending on the harvesting area. Its aroma is pungent, recalling tannins and wet wood, characteristic of woodland environments. On the palate, the initial sweetness is quickly balanced by a deep aromatic component that develops into a bitter aftertaste, highly appreciated by connoisseurs. This complexity makes it perfect for contrasting the sweetness of certain dairy products or for adding an aromatic boost to full-bodied traditional dishes.

Choosing this honey means relying on a producer that has made artisan excellence its mission, as demonstrated by the awards received in the "Tre Gocce d'Oro" competition (Grandi Mieli d'Italia). In the kitchen, Piero and Eva's chestnut honey reaches its fullest expression when paired with aged cheeses, such as strong Tuscan pecorino, or with smoked meats. A traditional use of this honey is in preparations based on chestnut flour, such as castagnaccio, where it enhances the earthy notes of the fruit. Each jar is a testament to transparency and passion, offering food safety based on an extremely short supply chain and an unwavering commitment to the health of the bees.
