Acacia Honey – Azienda Agricola Maccioni Piero

The Acacia Honey from Azienda Agricola Maccioni Piero is a fine example of Tuscan organic beekeeping, produced with dedication in the hills of Larciano.

This nectar stands out for its extraordinary clarity and its fluid consistency, which remains unchanged over time, characteristic of the finest artisan production.

Pale straw-yellow and almost colourless, with an extremely delicate aroma reminiscent of white black locust flowers, it offers a sweet, jam-like flavour with subtle notes of vanilla.

Perfect for those seeking a natural sweetener that does not alter the aromatic profile of the beverages or foods with which it is paired, representing the perfect synthesis of the biodiversity of Montalbano and the beekeeping expertise of Piero and Eva.

Description

Acacia Honey – Azienda Agricola Maccioni Piero

Azienda Agricola Maccioni Piero has made respect for the environment and the wellbeing of bees its distinctive hallmark. Located at the foot of the village of Cecina, in Larciano, the farm operates in a hilly setting where the flowering of Robinia pseudoacacia takes place in a protected environment far from sources of intensive pollution. Producing acacia honey is a challenge that Piero and Eva face every year with technical precision and meticulous observation of seasonal rhythms. As an early-flowering honey, it requires skilful hive management to ensure that the bee colonies are strong and ready at the precise moment of nectar secretion, resulting in a product that is as faithful an expression of the Tuscan territory as possible.

From a processing perspective, the company's approach is rigorously artisan. Once the honey supers have been collected, extraction takes place through cold mechanical centrifugation, a method that preserves all the original sensory characteristics of the honey. Unlike industrial production, the honey undergoes no thermal pasteurisation, thus preserving its aromatic integrity and natural richness of fragrances. Decanting takes place spontaneously in the maturation tanks, where air bubbles and any impurities rise to the surface, leaving a final product of crystal-clear transparency, an unmistakable sign of careful laboratory management that avoids overheating which could degrade its organoleptic properties.

The organoleptic characteristics of Maccioni Piero's organic acacia honey make it one of the products most appreciated by connoisseurs. On the nose, it reveals a delicate, floral and slightly fruity aroma, while on the palate its sweetness is silky, without acidity or bitter aftertaste. Its high fructose concentration is what ensures its natural liquid state, making it extremely practical for everyday use. An interesting feature of this variety is its versatility: in Tuscany, tradition sees it not only served at breakfast, but also paired with blue or aged cheeses such as Pecorino Toscano DOP, where its neutral sweetness perfectly balances the savouriness of sheep's milk.

Choosing the honey from Azienda Agricola Maccioni Piero means supporting a small producer that has received prestigious awards, such as the "Tre Gocce d'Oro" in the Grandi Mieli d'Italia competition, testifying to quality standards that are well above the industry average. Organic certification also guarantees that every jar is the result of beekeeping practices that protect the health of bees and soil. In the kitchen, this acacia honey is the ideal companion for sweetening artisan yoghurts, fresh fruit salads or preparing light batters and doughs, where its ability to dissolve quickly makes it an excellent technical ingredient. Each jar is a liquid expression of a territory, of a family's passion, and of the tireless work of bees in the green heart of the province of Pistoia.
