Currently the most popular dessert around the region. Traditionally, since it is a preparation of cheese, it is packaged in areas mainly related to grazing, such as Barbagia and Ogliastra.
This type of dessert is available all year long. Traditionally the occasions of consumption were Easter and Christmas (Pasca de Aprile, Pasca de Natale), when it was easy to stock up on fresh cheese. In these periods shepherds used to abandon the sheepfolds and return home for the holidays bringing abundant supplies with them.
The Sebada is circular with jagged edges, consisting of two disks of dough of durum wheat flour, kneaded with lard (violada), which contains a filling of slightly sour cheese; it is then fried in hot oil and served piping hot, covered in honey, sweet or bitter, or sugar, according to taste.
