The lard consists in the fat layer that lies beneath the skin of the neck, the back and sides of pork, taken together with the rind to give consistency to the product that is subsequently subjected to salting and aromatization processes with spices with appropriate dosing of them dictated by the recipe and curing time controlled such that the maximum release the flavor and aroma in all its essence.
The pork lard of the Sardinian artisans is excellent to dress bruschetta, for appetizers and canapés. Very tasty, it's used for larding the fowl. The product is gluten and lactose free. It is perfectly matched with red wine as the Cannonau and Carignano del Sulcis.
