This semi-aged pecorino cheese is the result of meticulous processing that begins with the selection of the finest whole pasteurized sheep's milk from Sardinian sheep, a fundamental element that determines its high quality and unique flavor. Its shape is truncated-cylindrical with a slightly curved side, and its average weight ranges between 3 and 3.4 kilograms. The smooth, thin rind has a hazelnut-brown color that tends to darken as maturation progresses. It is surface-treated with preservatives and colorants for protection and is therefore not edible. Inside, Fioretto reveals a white to slightly straw-yellow paste, compact and grainy, characterized by sparse holes, a sign of its traditional production.
