Description

Fioretto - Sepi

We invite you to discover Fioretto, the quintessential table cheese from Sepi, a guardian of Sardinian cheesemaking tradition in the heart of Marrubiu, in the province of Oristano. This semi-aged pecorino cheese is the result of meticulous processing that begins with the selection of the finest whole pasteurized sheep's milk from Sardinian sheep, a fundamental element that determines its high quality and unique flavor. Production follows strict specifications that respect natural maturation times and traditional artisanal techniques, while benefiting from modern food hygiene and safety standards.

Its shape is truncated-cylindrical with a slightly curved side, and its average weight ranges between 3 and 3.4 kilograms. The smooth, thin rind has a hazelnut-brown color that tends to darken as maturation progresses. It is surface-treated with preservatives and colorants for protection and is therefore not edible. Inside, Fioretto reveals a white to slightly straw-yellow paste, compact and grainy, characterized by sparse holes, a sign of its traditional production.

What makes Fioretto Sepi a premium cheese is its distinctive sensory profile. Its flavor is pronounced yet delicately aromatic, with a pleasant sweetness balanced by mild savory notes. On the nose and palate, clear vegetal notes and aromas reminiscent of the Mediterranean scrubland and Sardinian pasture flowers can be detected, a direct reflection of the animals' diet and the botanical richness of the island environment.

The minimum aging period of 60 days in temperature- and humidity-controlled environments is the secret behind its texture and flavor intensity. The balance between the freshness of the milk and the expertise of the aging process makes it particularly appreciated as a slicing table cheese.

In the kitchen, Fioretto is extremely versatile. It is the perfect addition to a platter of typical cured meats and cheeses, where it can fully express its character. It pairs wonderfully with traditional Sardinian pane carasau and the sweetness of fig or pear preserves, or with good mountain honey, creating a delightful contrast of flavors.

For a wine pairing, a young glass of Cannonau di Sardegna DOC is recommended, enhancing its aromatic notes and structure. For a more elaborate preparation, it can also be grilled or baked during the first months of aging.

Its superior quality and inseparable connection with the Sardinian territory make it a flagship product for Sepi, representing a piece of history and Italian gastronomic tradition to bring to the table. Production continues throughout the year, ensuring the availability of this Sardinian specialty in various vacuum-packed formats, from whole wheels to smaller cuts.
